Broccoli Quiche with Mashed Potato Crust
Ingredients:
2 cups Potatoes (boiled and mashed)2 cups Broccoli (chopped)
1 cup Cheddar Cheese (shredded)
1 Onion (chopped)
3 Eggs
1 cup Milk
2 cloves Garlic (minced)
1/2 tsp Salt
1/2 tsp Black pepper
1 tbsp Olive oil
Directions:
- Preheat oven to 375°F.
- Spray a quiche dish with cooking spray.
- Mash the potatoes with milk and salt.
- Spread the mashed potatoes into the dish.
- Brush with olive oil and bake in oven until lightly browned.
- Into the prepared mashed potato crust, place the shredded cheese, broccoli, onion, and garlic.
- Whisk together the eggs, milk, salt and pepper.
- Bake in oven for 40 minutes, until slightly puffed and cooked.
- Serve hot.
