Ingredients:
2 cups Potatoes (boiled and mashed)
2 cups Broccoli (chopped)
1 cup Cheddar Cheese (shredded)
1 Onion (chopped)
3 Eggs
1 cup Milk
2 cloves Garlic (minced)
1/2 tsp Salt
1/2 tsp Black pepper
1 tbsp Olive oil
Directions:
  1. Preheat oven to 375°F.
  2. Spray a quiche dish with cooking spray.
  3. Mash the potatoes with milk and salt.
  4. Spread the mashed potatoes into the dish.
  5. Brush with olive oil and bake in oven until lightly browned.
  6. Into the prepared mashed potato crust, place the shredded cheese, broccoli, onion, and garlic.
  7. Whisk together the eggs, milk, salt and pepper.
  8. Bake in oven for 40 minutes, until slightly puffed and cooked.
  9. Serve hot.
