Mushrooms Florentine

Ingredients:
2 cups Fresh Mushrooms (washed and dried)
2 cups Spinach (blanched and stemmed)
2 tbsp Butter
¼ cup Onion (chopped)
4 cloves Garlic (minced)
1-cup Cheddar Cheese (grated)
1 tsp Salt
Directions:
  1. Preheat oven to 350F.
  2. Heat 1 tbsp butter in the pan and sauté garlic and mushroom until brown.
  3. Place the blanched spinach on bottom of shallow casserole and season it with salt, onion and butter. Sprinkle with ½ cup grated cheese.
  4. Arrange sautéed mushrooms over the spinach.
  5. Add the remaining cheese.
  6. Bake for 20 minutes until cheese is melted and browned.
  7. Serve hot.
