Egg Benedict
It is to be served at breakfast or brunch and it makes a great first course particularly in winter.

Ingredients:
2 Eggs
2 English muffins
3 slices Salmon (smoked)
2tsp Cheese
2tbsp Spinach (blanched)
Directions:
  1. Heat water in shallow pan.
  2. Gently break eggs into the water and let them poach for 3-4 minutes.(HINT: When you poach eggs, try adding a little vinegar and salt to the water. Vinegar helps the egg to hold its shape.)
  3. Lightly toast the split muffins on both sides.
  4. Butter the muffins and place them on the baking tray.
  5. Placed the blanced spinach on top of the muffin, followed by slices of smoked salmon and poached eggs.
  6. Sprinkle grarted cheese and keep in oven for few minutes.
  7. Serve hot.
