Egg Benedict
It is to be served at breakfast or brunch and it makes a great first course particularly in winter.

2 English muffins
3 slices Salmon (smoked)
2tsp Cheese
2tbsp Spinach (blanched)

Ingredients:
2 Eggs2 English muffins
3 slices Salmon (smoked)
2tsp Cheese
2tbsp Spinach (blanched)
Directions:
- Heat water in shallow pan.
- Gently break eggs into the water and let them poach for 3-4 minutes.(HINT: When you poach eggs, try adding a little vinegar and salt to the water. Vinegar helps the egg to hold its shape.)
- Lightly toast the split muffins on both sides.
- Butter the muffins and place them on the baking tray.
- Placed the blanced spinach on top of the muffin, followed by slices of smoked salmon and poached eggs.
- Sprinkle grarted cheese and keep in oven for few minutes.
- Serve hot.
