Egg on Mushroom Brown Rice
This is a wonderful emergency recipe that can be cooked in minutes.

No. of Servings: 6
Ingredients:
1/2-cup Celery (sliced)
1/2 cup Green Pepper (diced)
1/2 cup Fresh Mushrooms (sliced)
3 tbsp Butter
6 Eggs
1/2 cup Milk
3 cups Brown Rice
1 cup Shredded Cheese
1/4 tsp Ground Black Pepper
1 tsp Salt
Directions:
  1. Boil the rice in the pan.
  2. Melt butter in a saucepan.
  3. Sauté celery, pepper and mushrooms in it for 2 minutes.
  4. Add 5 eggs, milk, salt and black pepper in small bowl.
  5. Reduce the heat and pour egg mixture over vegetables.
  6. Stir for 2 minutes.
  7. Add rice and cheese to the above mixture.
  8. Serve with rice with fried egg on the top.
