Blueberry Cheesecake
A cheesecake is a combination of crust and soft filling.Cheesecakes can be made of ricotta cheese, havarti, quark or cream cheese.

6 cups Whipped Cream
2 tsp Gelatin
3/4 cup Fresh Milk
4 Egg Yolks
1 cup Granulated Sugar
1 cup Cookie Crumbs
2 tsp Vanilla Extract
2 tsp Lime Juice
3 tbsp Butter (melted)
FOR TOPPING
1/2 cup Blueberry
1 tbsp Gelatin
2 cups water

Ingredients:
2 cups Cream Cheese6 cups Whipped Cream
2 tsp Gelatin
3/4 cup Fresh Milk
4 Egg Yolks
1 cup Granulated Sugar
1 cup Cookie Crumbs
2 tsp Vanilla Extract
2 tsp Lime Juice
3 tbsp Butter (melted)
FOR TOPPING
1/2 cup Blueberry
1 tbsp Gelatin
2 cups water
Directions:
- In a bowl, mix cookie crumbs with butter.
- Spread it at the bottom of the pie plate and smoothen with a spoon. Freeze it till hard.
- In a separate bowl, mix cream cheese, vanilla extract and lime juice.
- Dissolve gelatin in one and a half cup of water and keep aside.
- In another bowl, mix the egg yolks and sugar and add 2 tbsp of boiling milk.
- Boil remaining milk and add the egg sugar mixture to it.
- Cook on slow fire to thicken stirring continuously.
- Remove from heat and mix in the gelatin. Cool.
- Add the mixture to the cheese cream mixture and fold well until all lumps are smoothened out.
- Fold in the whipped cream.
- Pour the mixture on the top of the frozen biscuits.
- Refreeze till hard.
- FOR TOPPING
- Dissolve the gelatin in cold water and mix it with the blueberry filling.
- Boil and then cool.
- Pour it over the top of the hardened cheese cake.
- Set again in the fridge.
