Blueberry Cheesecake
A cheesecake is a combination of crust and soft filling.Cheesecakes can be made of ricotta cheese, havarti, quark or cream cheese.

Ingredients:
2 cups Cream Cheese
6 cups Whipped Cream
2 tsp Gelatin
3/4 cup Fresh Milk
4 Egg Yolks
1 cup Granulated Sugar
1 cup Cookie Crumbs
2 tsp Vanilla Extract
2 tsp Lime Juice
3 tbsp Butter (melted)
FOR TOPPING
1/2 cup Blueberry
1 tbsp Gelatin
2 cups water
Directions:
  1. In a bowl, mix cookie crumbs with butter.
  2. Spread it at the bottom of the pie plate and smoothen with a spoon. Freeze it till hard.
  3. In a separate bowl, mix cream cheese, vanilla extract and lime juice.
  4. Dissolve gelatin in one and a half cup of water and keep aside.
  5. In another bowl, mix the egg yolks and sugar and add 2 tbsp of boiling milk.
  6. Boil remaining milk and add the egg sugar mixture to it.
  7. Cook on slow fire to thicken stirring continuously.
  8. Remove from heat and mix in the gelatin. Cool.
  9. Add the mixture to the cheese cream mixture and fold well until all lumps are smoothened out.
  10. Fold in the whipped cream.
  11. Pour the mixture on the top of the frozen biscuits.
  12. Refreeze till hard.
  13. FOR TOPPING
  14. Dissolve the gelatin in cold water and mix it with the blueberry filling.
  15. Boil and then cool.
  16. Pour it over the top of the hardened cheese cake.
  17. Set again in the fridge.
