Fish Fillet with Black Bean Compote
This is a healthy and low calorie recipe.Fish is good source of protein.

4 Spring Onion (chopped)
3 cloves Garlic (minced)
2 tbsp Ginger (sliced)
1 Red Bell Pepper (chopped)
1 can Black Beans
1 can Tomatoes (diced)
2 tbsp Fresh Lemon Juice
2 tbsp Green Chilies (diced)
2 tsp Sesame Oil
2 tbsp Corinder sprigs (chopped)
Salt and Pepper to taste

Ingredients:
6 Sole Fillets 4 Spring Onion (chopped)
3 cloves Garlic (minced)
2 tbsp Ginger (sliced)
1 Red Bell Pepper (chopped)
1 can Black Beans
1 can Tomatoes (diced)
2 tbsp Fresh Lemon Juice
2 tbsp Green Chilies (diced)
2 tsp Sesame Oil
2 tbsp Corinder sprigs (chopped)
Salt and Pepper to taste
Directions:
- Heat a heavy nonstick skillet over medium-high heat.
- Brush both sides of fillets with 1 tsp oil.
- Place fillets in heated skillet and cook uncovered until browned and tender.
- Heat the 1 tsp oil in a wok until very hot.
- Add the ginger and spring onions. Stir-fry a minute.
- Add bell pepper, black beans, tomatoes, and chilies. Stir-fry a few more minutes until the vegetables are wilted.
- Stir in lemon juice and season to taste with salt and pepper.
- Garnish with coriander.
- Serve fish fillets over the black bean compote.
