Ingredients:
6 Sole Fillets
4 Spring Onion (chopped)
3 cloves Garlic (minced)
2 tbsp Ginger (sliced)
1 Red Bell Pepper (chopped)
1 can Black Beans
1 can Tomatoes (diced)
2 tbsp Fresh Lemon Juice
2 tbsp Green Chilies (diced)
2 tsp Sesame Oil
2 tbsp Corinder sprigs (chopped)
Salt and Pepper to taste
Directions:
  1. Heat a heavy nonstick skillet over medium-high heat.
  2. Brush both sides of fillets with 1 tsp oil.
  3. Place fillets in heated skillet and cook uncovered until browned and tender.
  4. Heat the 1 tsp oil in a wok until very hot.
  5. Add the ginger and spring onions. Stir-fry a minute.
  6. Add bell pepper, black beans, tomatoes, and chilies. Stir-fry a few more minutes until the vegetables are wilted.
  7. Stir in lemon juice and season to taste with salt and pepper.
  8. Garnish with coriander.
  9. Serve fish fillets over the black bean compote.
