Fish Florentine
Florentine is a dish paired with spinach. This dish can be prepared in advance and refrigerated and baked 30-40 minutes before serving.

1 tbsp Flour
1 cup Chicken Broth
4-6 Fish Fillets
2 cup Spinach (chopped)
3 cloves Garlic (minced)
2 tbsp Lemon Juice
1 tbsp Parsley
3-4 Tomatoes (sliced)
1 tsp Paprika
˝ cup Parmesan cheese (grated)
Salt and Pepper to taste

Ingredients:
1 tsp Butter1 tbsp Flour
1 cup Chicken Broth
4-6 Fish Fillets
2 cup Spinach (chopped)
3 cloves Garlic (minced)
2 tbsp Lemon Juice
1 tbsp Parsley
3-4 Tomatoes (sliced)
1 tsp Paprika
˝ cup Parmesan cheese (grated)
Salt and Pepper to taste
Directions:
- In a saucepan, sauté garlic in butter.
- Add flour and then chicken broth and cook until thickened to make a sauce.Add a pinch of salt if needed.
- Take a casserole dish and pour ˝ of the sauce in the bottom.
- Spread spinach over it.
- Drizzle the fish fillets lightly with lemon juice, and then sprinkle with the salt and pepper.
- Arrange the fish fillets over the spinach.
- Arrange the sliced tomatoes over top.
- Sprinkle parsley and paprika over all.
- Sprinkle with Parmesan cheese.
- Bake uncovered at 350° for 30-40 minutes.
