Ingredients:
1 tsp Butter
1 tbsp Flour
1 cup Chicken Broth
4-6 Fish Fillets
2 cup Spinach (chopped)
3 cloves Garlic (minced)
2 tbsp Lemon Juice
1 tbsp Parsley
3-4 Tomatoes (sliced)
1 tsp Paprika
½ cup Parmesan cheese (grated)
Salt and Pepper to taste
Directions:
  1. In a saucepan, sauté garlic in butter.
  2. Add flour and then chicken broth and cook until thickened to make a sauce.Add a pinch of salt if needed.
  3. Take a casserole dish and pour ½ of the sauce in the bottom.
  4. Spread spinach over it.
  5. Drizzle the fish fillets lightly with lemon juice, and then sprinkle with the salt and pepper.
  6. Arrange the fish fillets over the spinach.
  7. Arrange the sliced tomatoes over top.
  8. Sprinkle parsley and paprika over all.
  9. Sprinkle with Parmesan cheese.
  10. Bake uncovered at 350° for 30-40 minutes.
