Chingri Malai or Creamy Prawn Curry
An authentic recipe from Bengal (eastern India).

Ingredients:
400gms Prawns
3 tbsp Mustard Oil
½ tbsp Whole Cumin
2 tbsp Ginger Paste
1 tbsp Cumin Paste (soak cumin in water overnight and grind)
6 Green Chillies (slit)
1 tsp Turmeric Powder
Salt to taste
1 tsp Sugar
1 tsp Garam Masala
1¼ cups Coconut Milk
Directions:
  1. Blanch the prawns in turmeric water.
  2. Heat the mustard oil in a pan and add sugar and whole cumoin seeds.
  3. Add ginger paste, red chilli powder, cumin paste and turmeric powder and saute.
  4. Add the prawns and slit green chillies and stir for few minutes.
  5. Pour in the coconut milk, cook for few more minutes and then add salt.
  6. Sprinkle garam masala.
  7. Serve hot.
