Zucchini Quiche
A quiche is a baked dish that is made of eggs and milk in a pastry crust. It is a light and healthy recipe.

¾ cup Cream
½ tsp Dried Oregano
4 Basil Leaves
1 cup Mozzarella Cheese (shredded)
¼ tsp Salt
3 Spring Onions (chopped)
2 cloves Garlic (minced)
1 cup Zucchini (diced)
½ cup Black Olives (sliced)
½ cup Green Bell Pepper (chopped)
1 cup Mushroom (sliced)
2 tbsp Olive Oil
3 large Tomatoes (sliced)

Ingredients:
4 large eggs ¾ cup Cream

Directions:
- Pre-heat oven to 350°F.
- 2. In a bowl, combine eggs, basil, cheddar cheese salt, pepper and oregano. Beat well with an electric mixer.
- Heat olive oil in a frying pan.
- Sauté the onions, garlic, black olives, zucchini, mushroom and bell pepper.
- Arrange the tomato slices and sautéed vegetables in the bottom of the pie shell.
- Pour egg mixture over the vegetables.
- Bake for 30 minutes or until set.
- Garnish with snipped basil leaves.
- Serve hot.
