Chicken Rice Burritos
Ingredients:
500 gms Chicken Breast (boneless, skinless and cut into strips)
2 cups Chicken Stock
½ cup Spring or Green Onions (sliced)
2 cloves Garlic (minced)
1 tbsp Chili Powder
1 cup rice (uncooked)
1 jar Picante Sauce
½ cup Black Olives (sliced)
1/4 cup Salsa
1 cup Cheddar Cheese (shredded)
1 cup Lettuce (shredded)
8 Tortillas (warm)
2 tsp Vegetable Oil
Salt to taste
Directions:
  1. Heat oil in the skillet. Add chicken, garlic and spring onion and stir them for 4-5 minutes.
  2. Add chicken stock and the seasonings.
  3. Boil it until the mixture thickens.
  4. Add 3/4 cup picante sauce.
  5. Boil rice and stir in the remaining picante sauce.
  6. Stir chicken mixture into rice.
  7. Add olives and cheese. Mix well.
  8. Spread 2 tbsp of mixture on the tortilla along with salsa and lettuce. Fold into burritos.
  9. Serve immediately as burritos tend to become soggy very soon.
