Fruit and Chicken Salad

2 cups Lettuce (chopped)
1 Cucumber (chopped)
1 Apple (sliced)
1 Pear (sliced)
1 Kiwifruit (sliced)
1 tbsp Celery (chopped)
2 tbsp Yogurt
1 tbsp Wine Vinegar
1 clove Garlic (crushed)
Salt and Black Pepper to taste
Ingredients:
2 cups Chicken Breast (roasted and shredded) 2 cups Lettuce (chopped)
1 Cucumber (chopped)
1 Apple (sliced)
1 Pear (sliced)
1 Kiwifruit (sliced)
1 tbsp Celery (chopped)
2 tbsp Yogurt
1 tbsp Wine Vinegar
1 clove Garlic (crushed)
Salt and Black Pepper to taste
Directions:
- Place the lettuce on a large dinner plate.
- Combine cucumber, apple, pear, kiwi and celery in a large mixing bowl.
- Lay the above mixture on the lettuce and in the center put the chicken.
- For dressing, combine yogurt, vinegar, garlic and seasonings in a small bowl.
- Drizzle dressing over the mixture.
- Serve immediately or cover and refrigerate up to 2 hours.
