Black Bean Taco Salad
Taco salad is quick and easy recipe for a delicious salad meal.
No. of Servings: 6
2 tbsp Olive Oil
¼ cup Green Onions (chopped)
1 ½ cups Tomatoes (chopped)
1 clove Garlic (minced)
¼ cup Fresh Cilantro (chopped)
2 tbsp Lime Juice
1/4 tsp Chili Powder
1 tsp Ground Cumin
¼ tsp Pepper
1 tbsp Cider Vinegar
Salad
2 cans Baked Black Beans
1 cup Cheddar Cheese (shredded)
1-cup Tomato (chopped)
1-cup Green Bell Pepper (chopped)
1-cup onion (chopped)
1 head Lettuce (shredded)
1 pack Tortilla Chips or Plain Doritos

Ingredients:
Vinaigrette2 tbsp Olive Oil
¼ cup Green Onions (chopped)
1 ½ cups Tomatoes (chopped)

¼ cup Fresh Cilantro (chopped)

Salad
2 cans Baked Black Beans
1 cup Cheddar Cheese (shredded)
1-cup Tomato (chopped)
1-cup Green Bell Pepper (chopped)
1-cup onion (chopped)
1 head Lettuce (shredded)
1 pack Tortilla Chips or Plain Doritos
Directions:
- Blend all vinaigrette ingredients in a blender until smooth.
- Take a salad bowl and combine lettuce, onion, green pepper and tomatoes.
- Add baked beans and cheese to it.
- Add vinaigrette and toss well to coat.
- Just before serving add tortilla chips, tossing well to combine with other ingredients.
