Ingredients:
Vinaigrette
2 tbsp Olive Oil
¼ cup Green Onions (chopped)
1 ½ cups Tomatoes (chopped)
1 clove Garlic (minced)
¼ cup Fresh Cilantro (chopped)
2 tbsp Lime Juice
1/4 tsp Chili Powder
1 tsp Ground Cumin
¼ tsp Pepper
1 tbsp Cider Vinegar
Salad
2 cans Baked Black Beans
1 cup Cheddar Cheese (shredded)
1-cup Tomato (chopped)
1-cup Green Bell Pepper (chopped)
1-cup onion (chopped)
1 head Lettuce (shredded)
1 pack Tortilla Chips or Plain Doritos
Directions:
  1. Blend all vinaigrette ingredients in a blender until smooth.
  2. Take a salad bowl and combine lettuce, onion, green pepper and tomatoes.
  3. Add baked beans and cheese to it.
  4. Add vinaigrette and toss well to coat.
  5. Just before serving add tortilla chips, tossing well to combine with other ingredients.
