Carrot and Green Peas Salad
The salad is as attractive as it is flavorful and nutritive.

1 cup Green Peas (shelled)
1 Onion (finely chopped)
2 Green Chilies (crushed)
A few Mint Leaves (chopped)
Lemon Juice to taste
1 tbsp Fresh Coriander
Salt & pepper to taste

Ingredients:
2 Carrots (chopped)1 cup Green Peas (shelled)
1 Onion (finely chopped)
2 Green Chilies (crushed)
A few Mint Leaves (chopped)
Lemon Juice to taste
1 tbsp Fresh Coriander
Salt & pepper to taste
Directions:
- Blanch the carrots and peas for about 5 minutes. Keep aside.
- Add the onions, chilies, mint leaves, salt, and pepper.
- Sprinkle lemon juice. Mix well.
- Garnish with finely chopped fresh coriander.
- Serve cold.
