Lettuce Salad
Healthy looking salad with tangy citrus flavor.

No. of Servings: 2-3
Ingredients:
1 Lettuce
100gms Spinach Leaves
1 cup Mint Leaves
1 cup Coriander Leaves
3-4 Spring Onions(finely sliced)
2 Avocados
½ cup Pumpkin Seeds
Pinch of Sichuan Pepper
Salt to taste
DRESSING
4 tbsp Olive Oil
2 tbsp Soy Sauce
2 cloves Garlic (finely diced)
2 tbsp Malt Vinegar
Directions:
  1. Remove leaves from lettuce, spinach, mint and coriander and wash well.
  2. Roughly tear leaves into large pieces.
  3. Place leaves in a large bowl.
  4. Sprinkle pumpkin seeds over it.
  5. Halve the avocados and spoon out the flesh over the salad leaves and pumpkin seeds.
  6. Add spring onions.
  7. To make the dressing, place all ingredients in a small bowl and stir to combine.
  8. Pour dressing over salad leaves and toss well.
  9. Arrange on a platter, sprinkle with Sichuan pepper and salt and serve immediately.
