Lettuce Salad
Healthy looking salad with tangy citrus flavor.
No. of Servings: 2-3
100gms Spinach Leaves
1 cup Mint Leaves
1 cup Coriander Leaves
3-4 Spring Onions(finely sliced)
2 Avocados
½ cup Pumpkin Seeds
Pinch of Sichuan Pepper
Salt to taste
DRESSING
4 tbsp Olive Oil
2 tbsp Soy Sauce
2 cloves Garlic (finely diced)
2 tbsp Malt Vinegar
No. of Servings: 2-3
Ingredients:
1 Lettuce100gms Spinach Leaves
1 cup Mint Leaves
1 cup Coriander Leaves
3-4 Spring Onions(finely sliced)

½ cup Pumpkin Seeds
Pinch of Sichuan Pepper
Salt to taste
DRESSING
4 tbsp Olive Oil
2 tbsp Soy Sauce
2 cloves Garlic (finely diced)
2 tbsp Malt Vinegar
Directions:
- Remove leaves from lettuce, spinach, mint and coriander and wash well.
- Roughly tear leaves into large pieces.
- Place leaves in a large bowl.
- Sprinkle pumpkin seeds over it.
- Halve the avocados and spoon out the flesh over the salad leaves and pumpkin seeds.
- Add spring onions.
- To make the dressing, place all ingredients in a small bowl and stir to combine.
- Pour dressing over salad leaves and toss well.
- Arrange on a platter, sprinkle with Sichuan pepper and salt and serve immediately.
