Mediterranean-Style Salad With Sun-Dried Tomatoes
A salad full of delicious veggies.

Ingredients:
Dressing
6 Sun-Dried Tomatoes
1/4 cup Water
½ tbsp Garlic
½ cup Olive Oil
1 tbsp Orange Juice
1 tbsp Apple Juice
12 Olives
1 tsp Red Vinegar
1 tsp Fresh Rosemary (chopped)
Salt to taste
1/4 tsp Ground Black Pepper
Salad
3 cups Lettuce (torn into pieces)
1 cup Beet Root
1 cup Green Beans (steamed)
1 Green, Red and Yellow Bell Pepper (sliced into rings)
2 Potatoes (boiled and sliced)
1/2 cup Red Onion (sliced)
1 tsp Fresh Parsley ( minced)
Directions:
  1. Dressing
  2. Combine sun-dried tomato and water; bring to a boil.
  3. Chop sun dried tomatoes into thin slices.
  4. Add garlic, olive oil, orange juice, apple juice, black olives, rosemary, vinegar, salt, chili pepper, and black pepper.
  5. Put all that into the food processor.
  6. Puree until smooth. It is a tangy and spicy dressing.
  7. Salad
  8. Arrange lettuce evenly on the serving plate.
  9. Top with green beans, green, red and yellow bell pepper, potatoes, onion ,olives, parsley.
  10. Drizzle with dressing.
  11. Serve cold.
