Mediterranean-Style Salad With Sun-Dried Tomatoes
A salad full of delicious veggies.

6 Sun-Dried Tomatoes
1/4 cup Water
½ tbsp Garlic
½ cup Olive Oil
1 tbsp Orange Juice
1 tbsp Apple Juice
12 Olives
1 tsp Red Vinegar
1 tsp Fresh Rosemary (chopped)
Salt to taste
1/4 tsp Ground Black Pepper
Salad
3 cups Lettuce (torn into pieces)
1 cup Beet Root
1 cup Green Beans (steamed)
1 Green, Red and Yellow Bell Pepper (sliced into rings)
2 Potatoes (boiled and sliced)
1/2 cup Red Onion (sliced)
1 tsp Fresh Parsley ( minced)

Directions:
- Dressing
- Combine sun-dried tomato and water; bring to a boil.
- Chop sun dried tomatoes into thin slices.
- Add garlic, olive oil, orange juice, apple juice, black olives, rosemary, vinegar, salt, chili pepper, and black pepper.
- Put all that into the food processor.
- Puree until smooth. It is a tangy and spicy dressing.
- Salad
- Arrange lettuce evenly on the serving plate.
- Top with green beans, green, red and yellow bell pepper, potatoes, onion ,olives, parsley.
- Drizzle with dressing.
- Serve cold.
