Chicken Manchow Soup
A fabulous Chinese soup that is easy to make and quite filling.

Ingredients:
1 cup Chicken (steamed and shredded)
4 cups Chicken Stock
1tsp Ginger (finely chopped)
1tsp Garlic (finely chopped)
1tsp Coriander Leaves (finely chopped)
2 tbsp Carrot (grated)
2 tbsp Capsicum (finely chopped)
2 tbsp Mushrooms (finely chopped)
2 Spring Onions (finely chopped)
1 tsp Pepper
2 tbsp Corn flour
Salt to taste
Directions:
  1. In a pan fry ginger, garlic, coriander leaves and green chilies for 2 minutes.
  2. All carrot, capsicum and mushrooms and some salt . Fry for 2 minutes.
  3. Add chicken to vegetable mixture. Mix well.
  4. Add chicken stock. Boil it for sometime.
  5. Add cornflour. Stir it constantly till it thickens.
  6. Garnish with spring onions.
  7. Serve hot.
