Potato Soup

Ingredients:
3 Potatoes (peeled and cubed)
½ stalk Celery (minced)
1 tbsp Onion (minced)
¼ Carrot (grated)
3 cups Vegetable Stock
2 tsp Vinegar
1 ½ cups Milk
2 tbsp All-purpose Flour
1 tbsp Cheddar Cheese (shredded)
1 tsp Salt
Directions:
  1. Heat a pan, combine potatoes, celery, onion, garlic, carrot, vegetable stock, vinegar and salt.
  2. Bring to a boil, then reduce heat, cover and simmer 15 minutes.
  3. Beat together milk and flour and stir into the pan.
  4. Cook for 5 minutes.
  5. Serve hot topped with cheese.
