Stir-Fried Tofu
It is important to slice the vegetables finely when stir-frying. It gives beautiful color and texture to the dish.

Ingredients:
250gms Firm Tofu firm (finely sliced)
2 Garlic cloves (sliced)
1 Carrot (peeled and finely sliced diagonally)
1 Zucchini (peeled and finely sliced diagonally)
1 Red Pepper (seeded and sliced)
1 Onion (finely sliced)
4-5 Spring Onions (finely sliced)
1” Ginger (finely sliced)
2 tbsp Olive Oil
2 tbsp Soy Sauce
1 tbsp Lemon Juice
1 tbsp Vinegar
1 tsp Sugar
1 tsp Oyster Sauce
Directions:
  1. Heat oil in a hot wok until surface seems to shimmer slightly.
  2. Add tofu and fry quickly until all sides are browned. Remove tofu and set aside.
  3. Add garlic and stir-fry till it gets brown.
  4. Add carrot, onion and ginger and stir-fry for a minute.
  5. Add zucchini, pepper and sugar and stir-fry for a minute.
  6. Add fried tofu to it.
  7. Pour in soy sauce, vinegar and oyster sauce and stir-fry until vegetables are just tender.
  8. Toss in spring onion and stir-fry for few seconds.
  9. Pour into a large bowl and serve immediately.
