Ingredients:
5 Zucchini (halved lengthwise)
4 cloves Garlic (minced)
2 Onions (minced)
2 Tomatoes (chopped)
3 cups Rice (cooked)
2 cups Cheese (grated)
Salt and Pepper to taste
Directions:
  1. Preheat oven to 375 degrees F.
  2. Scoop out zucchini pulp.
  3. Finely chop pulp.
  4. Melt butter in the pan and sauté onion and garlic.
  5. Add pulp, tomatoes, salt and pepper.
  6. Add rice and stir well.
  7. Add half the cheese and mix well.
  8. Mound the mixture into zucchini shells.
  9. Cover and bake for 20-25 minutes.
  10. Sprinkle remaining cheese and bake for 15 minutes uncovered.
