Zucchini With Rice Stuffing

4 cloves Garlic (minced)
2 Onions (minced)
2 Tomatoes (chopped)
3 cups Rice (cooked)
2 cups Cheese (grated)
Salt and Pepper to taste

Ingredients:
5 Zucchini (halved lengthwise)4 cloves Garlic (minced)
2 Onions (minced)
2 Tomatoes (chopped)
3 cups Rice (cooked)
2 cups Cheese (grated)
Salt and Pepper to taste
Directions:
- Preheat oven to 375 degrees F.
- Scoop out zucchini pulp.
- Finely chop pulp.
- Melt butter in the pan and sauté onion and garlic.
- Add pulp, tomatoes, salt and pepper.
- Add rice and stir well.
- Add half the cheese and mix well.
- Mound the mixture into zucchini shells.
- Cover and bake for 20-25 minutes.
- Sprinkle remaining cheese and bake for 15 minutes uncovered.
