Palak Paneer
A North Indian dish of spinach and cottage cheese.

Ingredients:
1 bunch Spinach
250gms Paneer (cottage cheese)
1 tbsp Ginger-Garlic Paste
1 cup Tomato Puree
˝ tsp Cumin Seeds
˝ tsp Turmeric Powder
˝ tsp Red Chili Powder
2 Dried Red Chilies
2 Bay Leaves
1 tsp Garam Masala (mixture of cinnamon, roasted cumin, cloves, nutmeg or mace and green cardamom seed or black cardamom pods).
3 tbsp Cream
2 tbsp Oil
Salt to taste
Directions:
  1. Wash and chop the Spinach coarsely.
  2. Add a pinch of salt and boil in minimum water for 10 minutes.
  3. Cool and make a soft paste of spinach in a blender.
  4. Heat oil in a pan and fry the paneer pieces till golden brown. Set the paneer pieces aside.
  5. In another pan, heat oil and fry bay leaves and cumin seeds.
  6. Then add ginger-garlic paste, red chili and chopped onions. Sauté till light brown.
  7. Add tomato puree and stir.
  8. Add salt, red chili powder, garam masala and turmeric powder. Mix well.
  9. Add the spinach paste and cook for a couple of minutes.
  10. Add the paneer cubes cook for 2 minutes. Mix well.
  11. Serve garnished with cream & grated cheese on top.
