Paneer Bhurji
It is a quick and easy dish made with cottage cheese.


No. of Servings: 4
Ingredients:
500gms Paneer
4-5 Tomatoes (sliced into quaters)
2 tbsp Butter
2 Bay Leaves
3 Red Chillies
3 Green Cardamoms
4-5 Cloves
2 Black Pepper Corns
3 tsp Garlic Paste
1/2 tsp Ginger paste
2 tsp Cumin Seeds
2 tsp Garlic (chopped)
2 tsp Ginger (chopped)
1 Onion (chopped)
1 tsp Red Chilli Powder
2 tbsp Coriander Leaves
Salt to taste
FOR MARINATION
2 tsp Ginger and Garlic Paste
1 tsp Red Chilli Powder
Directions:
  1. Cut half the paneer into cubes and crumble the other half.
  2. Marinate the paneer cubes with ginger and garlic paste, salt and red chilli powder.
  3. Heat oil in the pan and add bay leaves, whole red chilli, green cardamoms, cloves, black pepper corns, garlic paste and ginger paste.
  4. As the garlic turns brown add the tomatoes, salt and cook on low heat.
  5. When the tomatoes are cooked, strain them and the tomato paste is ready.
  6. Heat oil in another pan.
  7. Add cumin seeds, chopped garlic and ginger.
  8. As the garlic turns brown add onion.
  9. When onion turns golden brown add red chilli powder and tomato paste and cook for 5 minutes.
  10. Add the paneer cubes and add lemon juice. Cook on low heat for 5 minutes.
  11. Add the crumbled paneer and cook for a minute.
  12. Garnish with coriander leaves.
  13. Serve hot.
