Portabella Bruschetta
This Italian recipe is fast, easy, and delicious. This is a quick snack in a hurry and can be served as a light lunch.

6 cloves Garlic (chopped)
1 tbsp Olive Oil
2 tbsp Fresh Basil (chopped)
¼ cup Dried Tomatoes
2 tbsp Lemon Juice
2 slices Ciabatta (Crusty Italian Bread)
Salt and Pepper to taste

Ingredients:
3 big Portabella Mushrooms (cleaned and chopped)6 cloves Garlic (chopped)
1 tbsp Olive Oil
2 tbsp Fresh Basil (chopped)
¼ cup Dried Tomatoes
2 tbsp Lemon Juice
2 slices Ciabatta (Crusty Italian Bread)
Salt and Pepper to taste
Directions:
- In a small pan, heat the water until it boils. Remove from heat and add tomatoes. Soak for 15 minutes and puree them.
- In a pan, heat olive oil. Sauté garlic and mushroom over medium heat until tender, and the liquid released from mushrooms has evaporated.
- Fold mushrooms into tomato mixture.
- Season with basil, lemon juice, salt and pepper.
- Serve with toasted ciabatta.
