Portabella Bruschetta
This Italian recipe is fast, easy, and delicious. This is a quick snack in a hurry and can be served as a light lunch.

Ingredients:
3 big Portabella Mushrooms (cleaned and chopped)
6 cloves Garlic (chopped)
1 tbsp Olive Oil
2 tbsp Fresh Basil (chopped)
¼ cup Dried Tomatoes
2 tbsp Lemon Juice
2 slices Ciabatta (Crusty Italian Bread)
Salt and Pepper to taste
Directions:
  1. In a small pan, heat the water until it boils. Remove from heat and add tomatoes. Soak for 15 minutes and puree them.
  2. In a pan, heat olive oil. Sauté garlic and mushroom over medium heat until tender, and the liquid released from mushrooms has evaporated.
  3. Fold mushrooms into tomato mixture.
  4. Season with basil, lemon juice, salt and pepper.
  5. Serve with toasted ciabatta.
