Roasted Sweet Potato
Healthy way to prepare sweet potatoes. This sweet potato dish goes well with any roasted or grilled meat.

4 cups Onion (chopped)
2 tsp Olive Oil
1 tsp Chili Powder
1 tsp Black Pepper
1 tbsp Honey
1/4 cup Fresh Lime Juice
1/4 tsp Ground Cinnamon
Salt to taste

Ingredients:
7 cups Sweet Potatoes (peeled, cut into 1 inch chunks) 4 cups Onion (chopped)
2 tsp Olive Oil
1 tsp Chili Powder
1 tsp Black Pepper
1 tbsp Honey
1/4 cup Fresh Lime Juice
1/4 tsp Ground Cinnamon
Salt to taste
Directions:
- Preheat oven to 425 F.
- Place the sweet potatoes in a pan with the olive oil.
- Sprinkle the chili powder, salt and black pepper over the potatoes. Toss well to coat.
- Pour onto a baking sheet and spread them out.
- Bake for 25 minutes in the oven. Check the sweet potatoes and if they stick, pour a drizzle of olive oil over them.
- Add the onions honey and cinnamon, stirring well.
- Bake an additional 10 minutes; remove from oven.
- Sprinkle lemon juice and serve.
