Ingredients:
7 cups Sweet Potatoes (peeled, cut into 1 inch chunks)
4 cups Onion (chopped)
2 tsp Olive Oil
1 tsp Chili Powder
1 tsp Black Pepper
1 tbsp Honey
1/4 cup Fresh Lime Juice
1/4 tsp Ground Cinnamon
Salt to taste
Directions:
  1. Preheat oven to 425 F.
  2. Place the sweet potatoes in a pan with the olive oil.
  3. Sprinkle the chili powder, salt and black pepper over the potatoes. Toss well to coat.
  4. Pour onto a baking sheet and spread them out.
  5. Bake for 25 minutes in the oven. Check the sweet potatoes and if they stick, pour a drizzle of olive oil over them.
  6. Add the onions honey and cinnamon, stirring well.
  7. Bake an additional 10 minutes; remove from oven.
  8. Sprinkle lemon juice and serve.
